Fungal Contamination and the Incidence of Ochratoxin-A In Some Cereals and Products

Abstract: One hundred samples (wheat, corn, corn flour, oat, oat flour, muesli) were analysed for ochratoxin-A and fungal contamination. Ochratoxin-A was detected in four samples at the level of 0.27-9.84 ppb in one wheat, two corn and one oat flour samples. Total mould and yeast counts were detected to be 20-<10/g in two of the four samples which were contaminated with ochratoxin-A.
