The Effect of Hydrogenation on Some Chemical Properties of Soybean Oil

Abstract: Some changes occurring in soybean oil hydrogenated using Ni catalyst in a batch reactor at 220°C and 2.5 atm H_2 pressure were monitored. For this aim, iodine number, fatty acid composition, conjugated fatty acid and trans fatty acid contents were determined on samples taken at different intervals of the reaction. Iodine number had a regular decrease during the reaction, on the other hand, conjugated fatty acid content increased till 30 th. minute and then decreased permanently. There was an absolute selective conditions up to 60 th. minute of hydrogenation. Then, selectivity raito decreased gradually, which was calculated as 49.33 at the end of the process. Slectivity ratio must be kept as high as possible during the whole process and the studies must be done on the selective cataliyts generating less trans acid.
